Recipe: Banana, Blueberry, & Apple Bread w/ Chocolate Chips

After re-reading yesterday’s post, I realized how much I rattled off about my weekend. Oops. But here’s something good that comes out of it…the recipe for the delicious bread that now lives as muffins in my fridge…well, what’s left of them. The recipe was really quite simple and I ended up making some minor adjustments to the original. I added chocolate chips, which went really well with the fruit since I was pretty short on blueberries. The whole process was a little more time consuming than I bargained for (I can’t say I’d grated apples prior to this) but I would definitely make it again. Soo worth it. The original recipe says to bake this as a loaf, but I made them into both mini-muffins and regular-sized muffins. The minis were perfect for impromptu snacking and the regular ones are perfect for breakfast, although they’re good enough where you’ll probably eat two since they’re really delicious.

Banana, Blueberry & Apple Bread w/ Chocolate Chips

Makes one loaf of bread or approximately two dozen muffins

Ingredients:

– 1/4 cups butter
– 3/4 cups brown sugar
– 2 large eggs (or 3 small)
– 3 whole ripe bananas
– 2 whole apples (I used gala, but any should be fine)
– 1/2 cup blueberries
– 1/3 cup chocolate chips
– 2 cups flour
– 1 teaspoon baking powder
– 1 teaspoon baking soda
– 1 teaspoon cinnamon
– 1/2 teaspoon salt

Directions:

Preheat oven to 375°F. Cream butter and brown sugar together until light and fluffy. Add beaten eggs to the mix and blend. Then add the bananas, grated apples, and blueberries to the mix and  blend well. Add the dry ingredients and mix thoroughly. Add the chocolate chips at the end. Grease whatever pan you choose to use and pour the mixture, filling until about 3/4 full. If baking in a standard loaf tin, bake 50 minutes. If baking in regular muffin/cupcake tins, bake about 12 minutes or until fork inserted in middle comes out clean. If baking in mini-muffin/cupcake tins, bake approximately 8 minutes.
