Leafy Greens

Today is the first day of the semester and it’s always fitting to start off with an attempt at improving one’s diet. While my roommates and I are relatively healthy (with the exception of the continuous flow of baked goods that’s present in our apartment), I’ve been inspired to try some new variations of salad. I’m not someone who typically eats a salad as a main course of a meal, be it at home or at restaurants. I’d much rather have a smaller serving and follow it with something more substantial…even though salad can easily be substantial, I can’t help but view it as an appetizer.

With that being said, I’m inspired to branch out a little more in my salad. These look incredible and are on the verge of convincing me that I may just be able to eat a wholesome and filling salad as a meal far more frequently.
