Recipe: Pepper & Herbed Goat Cheese Pizza

I made a pizza for dinner a few days ago (shocking, I know). Since I haven’t been home for extended amounts of time much after going away to college, my parents are still pleasantly surprised by my minimal culinary capabilities.

The crust is actually Pillsbury, but the pizza still tasted light and fresh with the brightly colored vegetables and herbed goat cheese.

Pepper and Herbed Goat Cheese Pizza

Ingredients:

– pizza dough/crust for one pizza

– veggies (I used about half an orange pepper, half a green pepper, a quarter of an onion, and the three mushrooms that were left over in the fridge)

– 4oz herbed goat cheese (I used about 80% of the 4oz)

– about 12 ounces, give or take, of tomato sauce

Directions:

Bake crust according to instructions (usually about 7 minutes). Sauté veggies in olive oil until soft and well-cooked. Coat crust with tomato sauce, followed by cheese and veggies. Put back into oven for about 8 minutes, or until desired consistency.
