Although I make some variation of eggs with mushrooms and spinach all the time, it really never gets old. The key for me is alternating what you eat it with— whether it’s a tortilla, English muffin, or toast (personal favorite, thanks to my friend Coco). Deciding between ketchup and salsa also helps change things up.
This was also the first time that I cooked bacon on my own, and used turkey bacon. It was extra crispy and went perfectly with the scrambled eggs, tortilla, and salsa. With a side of Ovaltine, it was the perfect start to the day!
