In a hurry for lunch, I quickly toasted some bread, cooked some spinach and mushrooms in some olive oil, and cut up half an avocado. All this went on top of a veggie patty that I threw in the microwave with a piece of cheese on top. Adding some crispy turkey bacon added a crunchy consistency that made this a delicious hot sandwich.
While it might seem a little odd to put a variation of bacon on a veggie burger, it should be noted that veggie burgers are not always merely an alternative to beef. If you think of it as a completely different kind of sandwich, meat lovers too can enjoy it.
